We’re back for week 3, who’s excited for Curry?!

We present this delicious Tomato Curry recipe having teamed up with SCDA Community Support & Seahaven Community Food. It’s easy to look for a short-term fix, we’re humans… we all do it! But really what we need is a long-term solution.

Sometimes it’s hard to know what to cook, especially if we’re feeding a family or if we’re on a limited budget. Getting the right mix of fruit, veg, fibre and protein is important but can sometimes feel overwhelming.

We’ve teamed up with Seahaven Community Food to bring ideas from their recipe book, ‘Budget Bites’ straight to you! It’s amazing what can be rustled up with some tins, a bit of veg and a few spices.

Take this tomato curry recipe; you can swap in any vegetables you happen to have in the fridge or add a tin of chickpeas or kidney beans for a change. If spicy isn’t what you’re after, go light on the curry powder! Frozen vegetables work well here and are just as nutritious as fresh. You could also use tinned spinach or mushrooms to make it even quicker.

If you’re looking for a quick, healthy meal that all the family will eat then this is a winner. You can even re-heat the leftovers for tomorrow’s lunch! It really couldn’t be easier.
